How to eat more fruit

Do you need to eat more fruit? Just recently I was doing the weekly food shop with my man and while we were buying our produce, he asked if we were planning to buy any fruit. We weren’t.
This may not seem strange to you, but as someone whose life revolves around healthy food, and is studying nutritional medicine, as well as being a certified health coach, you’d think that fruit would be on my shopping list. Unless I was in the first week or two of a gut repair or cleanse, when fruit would be limited, there should have been. We definitely need to eat more fruit!
The truth is, I’m really picky about it. I have bananas in smoothies (we had some already) and we keep frozen berries to add to breakfasts, but otherwise I kind of avoid it. When fruit is prepared for me I can definitely get amongst it, but I’ve been trying to think of other ways I can eat more fruit in my diet without making it weird for myself.
So here’s a few ways you can sneak more fruit into your diet, you might need to get your Google on for some of the recipes so let me know if you find a ripper one!

Salads with fruit

  • Raspberries, peaches, blueberries, strawberries, apple, pomegranate all work well
  • Try fresh or grilled peaches or figs with roquette, goats cheese, hazelnuts or walnuts, blanched green beans or asparagus, and a balsamic vinaigrette
  • Coleslaw with apple – perfect with pork or BBQ
  • Kale, black rice, raspberry, and goats cheese salad
  • Orange, mesclun, and fennel salad
  • Watermelon, mint, feta, and red onion salad
  • Spinach, flaked almonds, blueberries, and feta
  • Classic Waldorf salad with apple, celery, walnuts, goats cheese
  • Chicken, spinach, roquette, cucumber, strawberries, pecans, and balsamic
  • Mango, avocado, cos lettuce, and prawn salad with lime dressing

Sweet treats with fruit

  • Puree fresh fruit to use as a topping: raspberries, mango, passionfruit, strawberries
  • Make you own fruit ice blocks with coconut water, and sliced fruit. Strawberry kiwi works well
  • Bali Gaytimes – heat cacao, coconut oil, and honey then dip frozen halved bananas, roll in crushed roasted peanuts and freeze until solid. Un-freaking-believable
  • Poached pears with vanilla bean gelato, yoghurt, or pannacotta
  • Melon ball salad with lime and fresh mint. Use different types of melon for funsies
  • Coconut black rice pudding with mango, lychees, and papaya

Breakfasts with fruit

  • Fruit bowl smoothies with banana, berries, mango, peach, almond or coconut milk, protein powder, psyllium husk, oats… find out what combination works for you
  • Breakfast parfait with berries, banana, muesli, kiwifruit, yoghurt, passionfruit etc
  • Cherry ripe bircher made with oats, grated apple, frozen cherries (or raspberries), shredded coconut, raw cacao, soaked in coconut or almond milk overnight
  • Brown rice pudding with honey, cinnamon and stewed stone fruit
  • French toasties with strawberries and ricotta (or Nutella!)

Snacks and starters with fruit

  • Chia pots with berries – soak chia seeds in 4x coconut milk overnight, add berries
  • Next time you’re making a cheese platter, add sliced apple, pear, and fresh figs
  • Figs with prosciutto and mascarpone, classic Italian morsel
  • Rainbow fruit skewers for picnics and kids
  • Cantaloupe wrapped in prosciutto is also a common Italian entree
  • Fig and blue cheese tarts with balsamic and rosemary… omg

Mains with fruit

Drinks with fruit

  • Add peach or mango puree to bubbly for a bellini perfect for brunch
  • Blend frozen berries, mango, watermelon, or pineapple, rum, and lime for daiquiris
  • Blend rum, pineapple, and coconut milk for a real Pina Colada
  • Midori, crushed pineapple, and coconut water
  • Pimms punch… and keep the fruit; strawberries, cucumber, orange. Yum
  • Vodka, canned lychees, coconut water, blend, add crushed ice
  • Rum, lime juice, sugar, passion fruit, crushed ice
  • Watermelon hibiscus coolers from Thug Kitchen. Try this one
